Lemon Catfish and Spinach Orzo
4 8 oz Catfish fillets
6 oz Lemon Garlic Sauce and Marinade
1 Cup Julienned spinach
2 Cups Cooked orzo
2 Tablespoon of minced shallots
2 Tablespoon of minced garlic
2 oz Vegetable oil
To taste- Salt and Pepper

Place the salmon on the grill. After one side is cooked, turn the fillets over and add the oil to the sauté pan. When the oil is heated, add the shallots and garlic. When the shallots and garlic are cooked thoroughly, add the orzo, salt, and pepper. Toss in pan. Add the spinach for thirty seconds. Mix the ingredients together and layer them onto a plate. Brush the Lemon Garlic Sauce and Marinade onto the salmon. Lay the salmon fillet onto the spinach orzo salad and serve warm. Four servings.

Lemon Catfish and Spinach Orzo

All-American Ribs
1 10 Pound rack of ribs
6 Cups of red bliss potatoes, cut in half.(width wise)
¼ Cup minced garlic
½ Cup olive oil
8 oz of Panhandle Barbeque Sauce

Preheat oven to 450. Smother ribs with Panhandle BBQ Sauce, and place in the oven on a large sheet pan. Cook for about one hour. (Time will vary depending how lean the meat is.) Remove from oven and place on the grill. Smother once again in Panhandle BBQ Sauce. Place red bliss potatoes into a large bowl with the garlic and oil. Mix until all potatoes have a light covering of oil and garlic. When the ribs are almost finished, place the potatoes onto the grill. Remove and place the ribs on a bed of the potatoes. Serves four people.

All-American Ribs

Smoked Greek Salad
8 Cups cooked Penne
1 Cup grape tomatoes
1- Cup pitted Kalamata olives
¼ Cup crumbled Feta cheese
4- Basil leaves, chopped
½ Red onion, julienned
½ Red pepper, julienned
½ Green pepper, julienned
8 Ounces of Smokey Bacon Vinaigrette

Mix all of the ingredients except for the Feta Cheese together. Place the salad in a large bowl, and sprinkle the Feta cheese on top. Keep cool until it is ready to be served. Serves four people.

Smoked Greek Salad

Classical Oriental Stir Fry
4 Chicken breasts, grilled and cut into slices.
1 Red onion, julienned
1 Green pepper, julienned
1 Red pepper, julienned
1 Carrot, julienned into matchstick size strips
4 Cups cooked white rice
2 Tablespoons of butter
8 Ounces of Samurai Fever Oriental Sauce

Place the butter, red onion, peppers, and carrots in a large sauté pan and sauté until al dente. Add the remaining ingredients together in a large bowl. Mix well and serve four.

Classical Oriental Stir Fry

Barbeque Baked Beans
2 16 oz Cans of baked beans
1 Large red onion, diced
4 Slices of bacon, cooked and diced
1 Cup of Mississippi Mash

Sauté the bacon and onions until they are crisp and caramelized. Drain, and then combine the baked beans, Mississippi Mash, onions and bacon. Serves four to six people.
